Spicy Maryland Fried Chicken.

During my college days I spent the summers working on a cattle farm to help pay for my college expenses. I still remember the farmer's wife cooking large amounts of southern fried chicken for lunch recipes. Her secret was to soak the chicken in buttermilk overnight. Piles of legs, wings and breasts. All crispy, juicy and delicious. I always looked forward to lunch at the old farm house and especially when it was fried chicken day. If you enjoy fried chicken slightly spiced then you will love this recipe.

Ingredients:

1 egg

1/4 cup milk

1 cup fine cracker crumbs

1/2 tsp. McCormick's old bay seasoning

Pinch or two of black pepper

2 cups peanut oil

Ready to cook fryer chicken pieces

Preparation:

Optional: Soak chicken pieces in buttermilk overnight. Heat peanut oil to 350 degrees in a cast iron chicken fryer. Cast iron chicken fryers hold the selected temperature while distributing the heat evenly. While oil is heating, combine slightly beaten egg and 1/4 cup milk together in a separate boul. Mix cracker crumbs with old bay seasoning and pepper in a another separate bowl or on a piece of wax paper. Now dip chicken pieces into egg/milk mixture, and then roll in cracker crumbs mix. Carefully place each piece of chicken in your cast iron fryer slowly so not to splatter the heated oil. Use dry cooking utensils instead of a fork. A fork will pierce the chicken skin and possible lose some of the juices. Remove each cooked piece to a metal rack to drain. Draining on a paper towel may cause the chicken to lose crispness. Some cooks suggest placing a stick or two of celery in the frying pan to increase the flavor of the Chicken for Lunch Recipes.
